I called customer service about the 40 degrees over and was told that is "normal" After three uses, grill wouldn't hold selected temp, temp kept falling. Turned off and cleaned. That fixed it. Cleaning this thing is a pain. Poor design. Now I clean burner before every use. Major pain. When smoking, it will not hold temp well. Bottom line: This is not the set it, and forget it Grill/smoker I was hoping for. It may be going back to Walmart
This piece of junk did not work when I received it fresh out of the box & now it's broke again!!! What a waste of money! First issue was a temp control module board, which the manufacturer actually sent me directly & I had to install it. Now after about 6 months of using it approximately 12-14 times, it won't even power up. I don't even want to attempt to fix it again!! I am going to spend the extra money & buy a Traeger!!
Well, there is! I bought this grill for a third what the Traeger costs, and guess what? It does a great job!! There are a couple of immediate advantages this grill has over my old grill. One, you can sear with it. Can't on the Traeger. Two, you can adjust the "P" setting for more or less smoke. I've got mine set to a little higher than medium. No adjustment on the Traeger.

Chin scratching ensued, but no definitive answer was found.  Possibly we were just lucky shoppers with a string of juicy meat purchases. The high heat temp swings mentioned above made the results even more baffling. One of our first tests was pork butts. Coming off the smoker, the bottoms were charred a bit and stuck to the grates, but pulling them apart the meat was surprisingly tender and moist. An injected turkey smoked beautifully and was so juicy it gushed deliciousness all over the side of our smoker and deck, and left a river of gravy streaming into the drip bucket on the side.
Really like this smoker. I can smoke a brisket for 10 - 18 hours (dependent on size) with minimal attention, just check it occasionally and as pellets as needed. I'm constantly smoking whole chickens (beer can style) for 3 - 4 hours as well as ribs, pork butt, fish, deer sausage, steak, chops, just about anything. Can start it and go about your work. I've had it for four+ years with the only problem arising when I mistakenly point pellet/control box into strong winds; auger overfeeds and suffocates fire.

Although the Pit Boss cook surface ran a bit hotter on the left side, it was reasonably even. With cooking temp set at 225° we measured temps at 240° left – 220° right. The difference increased exponentially as set temp went higher. At the "High" maximum position on the controller dial we monitored actual temps at 520 left – 475 right. Controllers respond to a thermostat inside the oven and increase or decrease pellet feeds to the firepot to maintain set temperatures. Your indoor kitchen oven works the same way with a controller that turns gas burners or electric elements on and off as needed. And while some sophisticated controllers are very good at keeping temps within a tight tolerance, it is not unusual to see some temp swings as the unit cycles on and off. The Pit Boss controller has wide temp swings that allow it to go way below and above your set temp. Although everything we cooked on Pit Boss came out with good smoke flavor and good smoke rings, we noticed a slight tendency to overcook the surface of meats on the cooking grate side. This led us to flip meats once or twice while cooking. We speculate this may be caused by the soaring temps PB's controller allows before cutting off the pellet feed.

I bought my pit boss 700FB a little over a year ago and I have used it at least once a week since I bought it. I have done everything from searing steaks to smoking brisket, Overall the quality is ok. But.... 1. It has a hard time holding lower temps, if I set the temp to 200 it will go to 275 then slowly go back to 200 then shoot back up again. 2. The heat deflector and and the tabs that hold it are are made from a low quality steel and are literally falling apart due to scaling. Other than those two complaints the grill is not bad for the price. I do not expect my grill to last much longer because of the tabs that hold the heat deflector are about to snap off, once that happens the grill is useless.

You are correct, I do not KNOW if these grills will last. That is also the point that I am trying to make…we don’t know if they will last and I am not going to put down several hundred bucks on something that doesn’t have a solid track record. This is a new brand that only carries a one year warranty. Pit Boss is made by the exact same people who make grills that carry a three year warranty on the electronics and a five year warranty on everything else on their high end pellet grills. Danson KNOWS how to make a pellet grill that lasts and they decided that they would only back the Pit Boss for one year.

Here's the conundrum pellet smoker manufacturers have been facing all along – people who own them love the ease of use and excellent results, and have no remorse for paying a few hundred bucks more than the cost of their neighbor's grill. But for many, pellet smokers are overpriced foreign objects, although that's changing as the pellet smoker industry slowly infiltrates the country, one backyard at a time. UPDATE 8/27 - This grill is still performing flawlessly. No error messages, maintains temperatures. I have made homeade pizzas and strombolis on a pizza stone and it actually makes them better than in the oven. Its like a restaurant wood fired pizza. I made a pork butt, beef brisket, bacon wrapped scallops....it just simply cooks everything well. Love my Pit Boss !!
