Really like this smoker. I can smoke a brisket for 10 - 18 hours (dependent on size) with minimal attention, just check it occasionally and as pellets as needed. I'm constantly smoking whole chickens (beer can style) for 3 - 4 hours as well as ribs, pork butt, fish, deer sausage, steak, chops, just about anything. Can start it and go about your work. I've had it for four+ years with the only problem arising when I mistakenly point pellet/control box into strong winds; auger overfeeds and suffocates fire.
I'm really loving this grill! So far I've cooked a tri tip. Brisket. Ribs and a pork butt. All on one 20lb bag of pellets. It's almost a set it and forget it kind if thing. I just pop out and look and the temp once and a while with the built in probe I don't have to open the lid and let out the smoke and heat. It steps up your bbq game to a different level for sure. This is very well made.
With 440 square inches of cooking space, an auger-fed pellet delivery system, and a digital LED thermostat and controller, your cooking will be simple, whether it’s burgers, a whole turkey, or racks of ribs. The side shelf is a convenient place for cooking tools or plates while the bottom shelf can hold spare bags of pellets or jugs of sauces out of the way.
This is definitely an interesting brand to consider. They make some of the best, big-size grills available on the market and they are more than just professional. Yes, all models use pellets, which is actually a positive side. In the Pit Boss vs. Traeger comparison, we must add that they are based on the same technology, but there are some differences.
Pit Boss Wood Pellet Grills are filled by all regular BBQ wood pellets. The computerized control board lights the grill and permits you to set the cooking temperature from 180° to 500°F. Fan constrained convection cooking takes out the requirement for a rotisserie and makes an adaptable situation for grilling, simmering, smoking, braising and preparing. The Pit Boss 340 has 340 sq. in. total cooking surface with porcelain covered cooking grids. With complete structural quality and strength, the Pit Boss 340 is made to last.
Pellet grills preheat quickly, so you can start cooking almost immediately, and the pellets are available in a number of woods, for different smoke flavors. The smoke has a subtle wood-fired flavor with less of the acrid flavor that comes from standard wood or charcoal. For the maximum smoke flavor, it’s best to cook at a temperature lower than 250 degrees, while higher temperatures cook faster with less smoke.
A screen covers the top of the hopper. Meant as a safety feature to prevent fingers from getting injured in the auger chute below, it also prevents one from easily leveling the pellets as they get sucked into the auger. We removed the screen and vowed to keep digits out of harms way. All models have an older style digital thermostatic dial controller with an LED display for set temp and actual temp. The controller has a couple undesirable quirks we'll address shortly.

Wood pellet grills are a great addition to any home because they combine everything you love about a smoker with a standard grill. Depending on the model that you buy, you can make smoked dishes like brisket and sausage at the same time that you make burgers, hot dogs and other dishes on the grill. These grills are great for family dinners in the summer and for parties and special occasion celebrations.
When it comes to construction, few companies can beat Traeger. Its grills come with construction features like cast-iron grates with a clear and nontoxic coating that prevents food from sticking to the grill and fireboxes made from a similar material. Though Pit Boss grills feature similar elements, many look flimsy, and most will not keep up with your grilling and smoking demands.
Awesome!.. clean, keeps temps, smokes like a boss (: 1st cookout was a 12lb pork butt, 24 brats, 12 hamburgers and 8 chicken thighs. Smoked the butt for 4 hours and wrapped. Kept it in for 6 hours at 250. It was a party favorite. I've never had a grill I could leave unattended for any length of time besides my electric smoker, and the flavor from the pitboss most definitely proves to be Superior. Thanks for the awesome setup guys!

To start, let’s talk equipment. You don’t need to spend a lot, but you do need something reliable. I love my Pit Boss Memphis Wood Pellet Grill. It’s an all-in-one gas grill, charcoal grill, and electric smoker. And it’s available exclusively at Walmart! Since it has three cooking methods in one, I made the dinner you see all outside using this grill.
Pit Boss offers a Small 340, Medium 440 Deluxe, Large 820 and 820 Deluxe. The numbers indicate total cooking surface including warming racks. All are 16 gauge black powder coated steel with porcelain coated cast iron grates, coated steel rod secondary removable cooking racks, and coated wire lower shelves. A handle attached to the wood pellet hopper on the left enables you to easily lift Pit Boss and roll it around on two large steel wheels on the right. A handy bracket to wrap up the electric cord is also located on the hopper (shown below).
Deluxe models have a unique arched drip plate, (above), which is found on many Louisiana smokers. Attempting to create a hot sear zone, a small plate is used to slide over openings in the larger arched plate to open or close direct exposure to the flaming firepot. The idea of exposing foods to the fire pot is used by several brands of pellet smokers. Generally it doesn't work well because the firepot flame is just too small to do much searing. Pit Boss is no exception. We placed a flight of chicken wings over the open slider, flipping occasionally while taking care not to move them from their original positions. As expected, only the few wings directly over the flame were seared,(below). The slider design dictates the absence of a flame diffuser over the firepot and one is not included with Deluxe models.

Although the Pit Boss cook surface ran a bit hotter on the left side, it was reasonably even. With cooking temp set at 225° we measured temps at 240° left – 220° right. The difference increased exponentially as set temp went higher. At the "High" maximum position on the controller dial we monitored actual temps at 520 left – 475 right. Controllers respond to a thermostat inside the oven and increase or decrease pellet feeds to the firepot to maintain set temperatures. Your indoor kitchen oven works the same way with a controller that turns gas burners or electric elements on and off as needed. And while some sophisticated controllers are very good at keeping temps within a tight tolerance, it is not unusual to see some temp swings as the unit cycles on and off. The Pit Boss controller has wide temp swings that allow it to go way below and above your set temp. Although everything we cooked on Pit Boss came out with good smoke flavor and good smoke rings, we noticed a slight tendency to overcook the surface of meats on the cooking grate side. This led us to flip meats once or twice while cooking. We speculate this may be caused by the soaring temps PB's controller allows before cutting off the pellet feed.
This pellet grill allows you to cook between the temperatures of 170F all the way up to 600F. The idea of cooking at such high temperatures sounds like a scary concept; but with the automated control system regulating air flow, you can be assured of a clean, safe and flavorful cook. The use of fans within the grill not only ensure safety and flavor, but cook food completely evenly, meaning you can rest assured of perfection every time. Even deactivating the grill post-use is made simple; all you need to do is press a button and the grill will safely power down, cooling as necessary all automatically.
First of all, Pit Boss uses more sophisticated technology and offers a wide range of choices. It comes with features such as automatic startup and cools down systems, which will make grilling easier and make it possible even for the beginners. Then we have a digital control system, which uses LED display. It is similar to the Traeger models, but not entirely. What’s a new feature is the smoke area which will keep the smoke inside, therefore eliminates the heat loss.
Operation of your Pit Boss Deluxe Wood Pellet Grill is easy. Simply load the pellet hopper with your favourite all-natural hardwood pellets and turn the dial to your desired pre-set temperature. Update 2/18/2018: I made another call to Pit Boss today to get more information about their Copperhead vertical smoker.  The phone was answered on the second ring by a man in Oregon. He was incredibly helpful and even went out to the warehouse and measured the grates for me.  It looks like if you can get past the automated system and reach a real person then these guys will take care of you.
