I just love this smoker/grill! I use it at least twice a week. I’ve made great pizza’s (on my Pit Boss Pizza Stone) The first one I ordered was delivered, and was broken. I called Pit Boss, and they replaced it right away, without any hassle! That’s good customer service! I love the fact that they carry so many natural flavored wood pellets. I use the apple wood pellets for ribs, the Hickory for steaks and chicken, and the competition blend for grilling burgers, salmon, etc. My friends are always impressed by the quality, I mean, this thing is a flavor machine! I’ve read a few negative reviews, but I have not had any problem with this machine. All you have to do is keep it clean, and it performs like a champ! I just bought the Pit Boss 820 right before Christmas. My first meal was cooking 12 hamburgers using the sear function. They turned out great but I do have to learn to control the temperature a little bit better. Then for Christmas dinner I smoked two ribeye roasts. They turned out great. I had everything from medium rare to well-done, with just the right amount of smoke flavor and a nice bark. Today I did a whole chicken. The skin was nice and crispy and the breast was moist with again a good mild smoke flavor. All in all my experience so far with the smoker has been very pleasing. I know there are still some things I need to learn as far as time and temperature and make some adjustments to the smoking which are all possible with this smoker. I have been using a combination pellet produced by Camp Chef and I’m very pleased with it.
That is right…it doesn’t mean that they WILL fill apart in 2-3 seasons. It means don’t be surprised if they do. Look, for the same price as the Pit Boss I can get a three burner Weber Spirit II E 310 with the high performance grilling system. The grill is built like a tank, performs amazing and comes with a TEN YEAR warranty. In my opinion, once you get into the $400-$500 range a 1 year warranty does not make the grade. I know plenty of folks that have the Pit Boss and they really like it. They like them so much that when they fall apart in a few years that I suspect they will buy another Pit Boss. Some folks are perfectly happy with disposable grills and smokers. I am not one of them.

Although the Pit Boss cook surface ran a bit hotter on the left side, it was reasonably even. With cooking temp set at 225° we measured temps at 240° left – 220° right. The difference increased exponentially as set temp went higher. At the "High" maximum position on the controller dial we monitored actual temps at 520 left – 475 right. Controllers respond to a thermostat inside the oven and increase or decrease pellet feeds to the firepot to maintain set temperatures. Your indoor kitchen oven works the same way with a controller that turns gas burners or electric elements on and off as needed. And while some sophisticated controllers are very good at keeping temps within a tight tolerance, it is not unusual to see some temp swings as the unit cycles on and off. The Pit Boss controller has wide temp swings that allow it to go way below and above your set temp. Although everything we cooked on Pit Boss came out with good smoke flavor and good smoke rings, we noticed a slight tendency to overcook the surface of meats on the cooking grate side. This led us to flip meats once or twice while cooking. We speculate this may be caused by the soaring temps PB's controller allows before cutting off the pellet feed.

I’m kinda torn between the 700 and the 820. Is the 820 THAT much bigger than the 700 I’ve only see the 700 all put together in a store. I really don’t need bigger but in Canada the price point is almost zero between the 2 of them. The 820 is only $100 more In Canada but comes with a cover while the 700 does not so I’m leaving towards the 820 it’d be the same price after I buy a cover for the 700. We don’t BBQ in any large quantities often it’s just a coupla hunks of chicken for dinner.

I got this for father's day 2017, I've put 120 lbs of pellets through mine. Overall it is great, good price for the money, sear plate is nice for grilling. After a long Texas summer with a lot of use, it now struggles to hold at 225. It will either run at 205 or 235. It used to hold like a champ. I started using a Therm Pro TP08 Dual Probe to confirm and it's showing the same thing. I've tried playing with the P settings but nothing works. My only other complaint is that the paint burned off of the outside underneath. Called customer service, left a couple voicemails, and never got a call back.

The unit arrived in perfect condition and was remarkably simple and intuitive to put together. It is actually harder to unpack than assemble! It took me about two hours, just taking my time with no help. One of the smart, presumably computer aided design elements is that the legs are ambidextrous, and the legs and bottom tray use the same hardware- so you don’t spend an hour trying to figure out right leg/left leg and sorting out 60 screws and washers. The handle and lid stop already have the hardware screwed in, so no brainer there either. After putting this together once, I could unpack and assemble another in less than an hour. The instructions are extremely well written- no weird “Chinese to American” translation issues whatsoever. The guide is poignant, and actually humorous at times.
