I just bought the Pit Boss 820 right before Christmas. My first meal was cooking 12 hamburgers using the sear function. They turned out great but I do have to learn to control the temperature a little bit better. Then for Christmas dinner I smoked two ribeye roasts. They turned out great. I had everything from medium rare to well-done, with just the right amount of smoke flavor and a nice bark. Today I did a whole chicken. The skin was nice and crispy and the breast was moist with again a good mild smoke flavor. All in all my experience so far with the smoker has been very pleasing. I know there are still some things I need to learn as far as time and temperature and make some adjustments to the smoking which are all possible with this smoker. I have been using a combination pellet produced by Camp Chef and I’m very pleased with it.

Bought the smoker about 6 months ago - haven't started the gas grill since! I still have a propane smoker at the campground - going to try and sell that because we love the pit boss that much. We've smoked ribs, pork loin, prime rib, steaks, pizza and one of my favorites was smoked cheese. By turning up the"p"setting we were able to keep the temp down to around 80-95 degrees. We've smoked food in 90 temps all the way to 20 below zero it's no joke. Absolutely love the pit boss!

You are correct, I do not KNOW if these grills will last. That is also the point that I am trying to make…we don’t know if they will last and I am not going to put down several hundred bucks on something that doesn’t have a solid track record. This is a new brand that only carries a one year warranty. Pit Boss is made by the exact same people who make grills that carry a three year warranty on the electronics and a five year warranty on everything else on their high end pellet grills. Strangely, whenever you switch cooking temp, the auger runs continuously for four minutes before trying to adjust to the new set temp. This isn't so bad if you're going from low to high, but problematic in the opposite direction. We were slow smoking ribs when interrupted just as they passed the bend test and were ready to be sauced. Forgetting the controllers odd four minute drill, we turned the temp down from 225° to the lowest "Smoke" setting to hold them briefly. Luckily we returned within a few minutes to rescue the ribs. The continuous pellet feed had goosed temps to 400°! A serious flaw that should be corrected.

It is the PERFECT size for us. Large enough to cook for a party (you could get a full-size brisket, a medium pork shoulder and a rack of ribs or two on this grill at the same time using both racks), but it doesn’t take up the whole backyard. It gets hot enough, so that you could grill some chicken breasts or leg quarters, and/or sausage links while your briskets and ribs are resting. I plan on using this to feed about 100 guests and my son’s graduation party, and I don’t think it will even be a stretch with some good timing and finishing some brisket and pork shoulder in an oven.
